You have three major papers due next week, a group presentation with someone who mysteriously forgot how to use PowerPoint, and that crazy, soul-searching project from that elective you thought would be your “fun” class. Right. Instead of running down Fifth St. crying and yelling textbook quotes in your underwear, say “fuck it,” calm down, and make these brownies. The rich chocolatey-ness and the Nutella icing will smooth over all of your stresses.
Ingredients:
2 eggs
1/2 cup – oil
1 cup – milk
1 tsp – vanilla
1 3/4 cup – flour
1/2 cup – sugar
1/4 cup – cocoa
1 tbsp – baking powder
1/2 tsp – salt
1/2 cup chocolate chips (semi-sweet or dark)
Icing:
3/4 cup – unsalted butter
2-3 cups – icing sugar
1/3 cup – milk
1 tsp – vanilla
1 cup – Nutella
Instructions:
1. Calm the fuck down.
2. Turn the oven to 400F.
3. In a medium bowl, mix wet ingredients: eggs, oil, milk, and vanilla.
4. In a large bowl, mix dry ingredients: flour, sugar, cocoa, baking powder, and salt.
5. Fold wet ingredient mix into dry ingredient mix.
6. Add chocolate chips.
7. Place mix into oiled baking pan.
8. Bake at 400F for 20 minutes. (Do not overcook—becomes cake-like!)
9. While brownies are baking, make icing.
10. Beat butter, icing sugar, milk, vanilla, and nutella together until fluffy.
11. Once brownies are cooked, remove from oven and allow cooling.
12. Spread icing onto brownies.
13. Eat brownies and sigh with relief.
