Hopefully, we have all recovered from our annual ritual of drinking copious amounts of liquor while making empty promises late into the night. (Did you really mean what you said about learning a new language, running a marathon, and being nicer to others?) In case you’re still basking in the possibilities of your New Year’s resolution—or if you just want a delicious salad dressing to drizzle on every vegetable ever harvested, here is my favourite: creamy fig balsamic vinaigrette. I suggest mixing it in with some dark leafy greens, grape tomatoes, cucumbers, red onion, and a couple of slices of bocconcini (fresh mozzarella).
Ingredients:
1/4 cup – olive oil
3 tbsp – balsamic vinegar
2 tbsp – Dijon mustard
3 tbsp – water
1 tsp. – honey
1 tbsp – lemon juice (roughly half of one lemon)
4 chopped sundried figs (find them in the produce section of your grocery store)
2 heaping tbsp – fresh parsley
1 clove of garlic
Pinch of black pepper for seasoning
Method:
In a bowl, mix olive oil, balsamic vinegar, and Dijon mustard together.
Pour mixture into blender or food processor.
Measure and pour all remaining into blender or food processor.
Pulse until mixture is smooth.
(Add a little more water if needed.)
Pour into container and use for
